It Started, Quite Simply, Like This...

For Brian, this journey began LONG before we actually decided to open a restaurant. Having worked in restaurants his entire life, opening his own place was his dream and goal. Given his passion for food, good, hearty home cooked food, it was a sure thing.

March 10, 2003, Brian's USA Diner opened it's doors. I remember telling Brian, that first Friday night, the line of customers was OUT THE DOOR! Just five days after opening!

Brian LOVES cooking and it truly shows. It's not about being fancy, or necessarily upscale. We're all regular people, that like regular food. GOOD FOOD. And yes, we are known for generous portions and speed of service. Fast, friendly service!

Located right next to Letchworth State Park, we see such a variety of people throughout the year. Locals, travelers (passing through on their way to somewhere or visiting and staying in our area), college students. We're a family diner, so our customer base is diverse. Give us a try! I bet you'll find something you'll like.

Brian started off as a dishwasher in a country club setting. He spent many hours watching the cooks. One night when a cook quit, the manager had been watching Brian and told him it was his turn to cook. There was no turning back from there. He has always been a natural. Instinctive as to what people like and infusing of flavors. He moved on to a Greek diner for many years and delicious food combined with speed brought him to decide to own his own place. One more stop along the way, before his dream then moved to real life. Brian is passionate about good food, fresh flavors, unique specials and excellent customer service. This restaurant is so embedded in his blood, I wonder if he will ever stop cooking.
